My week in Trinidad...

Today is the start of my blog... I'm excited to share and eager to discuss the day-to-day fun things that happen in life. Please feel free to share your thoughts on whatever... I'd love to hear them. My problem is that I could chat all day so I must keep my post to 20 minutes per day... yeah, right. I figure I might as well start with my most recent trip to Trinidad from which I just returned on Saturday...


Ahhh... back to snow in Chi-town after a most relaxing week of sleeping in, breakfast buffets, poolside reading, hiking and some great local food. The breakfast shed, where we spent most of our time eating while staying at the Hyatt, is famous in Port of Spain for its local cuisine... my favorite is the saltfish fry bake. A fry bake is a breakfast food that consists of dough that can be fried baked or roasted and stuffed with cheese, sausage or fried fish. They are delicious and of course the fried dough is the best. Other popular dishes are the macaroni pie, rice & beans, jerk pork, roti's and doubles. The local food is amazing!

I tagged along with the boys on their business trip so I spent a lot of time on my own which some might think would be boring but it was great. There is nothing better than having hours of free time to do whatever you want. I did a lot of reading, swimming laps, chatting with the hotel staff and new pool friends as well as writing a paper for a class I'm taking. This was my second trip to Trinidad. I got engaged in Tobago about 6 months ago so these islands are very special to me.

Ok, onto the real chit chat... I need to talk about the people I met and all the movies I watched. However, I'm totally new to this so I'm going to post now and continue later to see how this works. Chat soon!!! RIKA
